Vegetarian Halloumi Traybake

Ingredients

  • 2 zucchinis, cut into chunks
  • 2 peppers, cut into chunks
  • 2 tsp dried oregano
  • 2 red onions, cut into wedges
  • 300g cherry vine tomatoes
  • 1 x 400g tin chickpeas, rinsed and drained
  • 150g pitted kalamata olives, drained weight
  • 2 x 220-250g packs halloumi
  • 3 tbsp harissa
  • 1 lemon, cut into wedges
  • Olive oil

For the dressing:

  • Handful of fresh oregano, chopped
  • Handful of fresh basil, chopped
  • 1 lemon, juice only
  • 2 tbsp olive oil

Instructions

Prevent your screen from going dark as you follow along.

Heat the Gozney to 350C / 660F with a high flame.

Step 1

Toss the courgettes, peppers and dried oregano together on a baking tray with a good glug of olive oil and some salt and pepper.

Step 2

Cook for 5 or so minutes, mixing every so often, until starting to char and soften.

Step 3

Add the onion wedges, cherry vine tomatoes, chickpeas and olives to the tray and toss everything together. Drizzle over a little more oil and cook for 5 minutes.

Step 4

Tear the halloumi into a bowl and mix with the harissa then spoon over the top of the tray bake and cook for a few minutes until the halloumi is catching in places.

Step 5

Mix the dressing ingredients together and spoon over the finished dish and serve with some extra lemon wedges. Enjoy!
