Hot Dog and French Fries Pizza
Hot dog & French fries pizza...There's a reason Mike Fitzick (AKA @pizzajew) has one of the best pizzerias in New Jersey!
We invited Mike across the pond, to bring us some of his pizza wisdom straight from his pizza joint @bakeria1010 to Gozney HQ.
This time, it's an American classic - hot dogs & French fries on a pizza cooked in the Gozney Dome, check out the recipe below.
312g strong high gluten or bread flour
938g AP flour
9g compressed yeast
770ml water cold (62%) + 30ml water cold (67%)
Shoestring potatoes (or any other French fries)
To make Mike’s New York pizza dough for this recipe, add the yeast to the water and quick mix to combine. You can mix by hand but for better results use a mixer.
Add the flours and mix to combine for 5 to 7 minutes. Scrape down the mixer as you go. Rest for 5 mins.
Turn the mixer onto high and slowly add the 30ml of water (not all at once).
Next add the salt and sugar and mix for a further 5 to 7 mins.
Place the dough into an oiled bowl, cover and place in the fridge for an hour.
Ball the dough and place in the fridge for 24-48 hours.
When you are ready to make your Hotdogs and Fries pizza, fry your shoestring potatoes in oil to make your fries. Alternatively, you can use any crispy potatoes of your choice.
Next chop up your hotdogs and fry them too.
Open up the dough and top with mozzarella and drizzle with olive oil.
Bake in your Gozney Dome or Roccbox at a temperature of 287°C, air temp of 398°C – on a low lame until golden brown.
Once cooked, remove from the oven and add your hotdogs and fries. Slice and enjoy!
